Cheese and Mushroom Stuffed Chicken

While on the subject of yummy foods, I have to tell you that the cheese and mushroom stuffed chicken that I made last night (under protest, mind you) turned out really great. I don’t normally like anything to do with mushrooms, although I have found a few recipes that I have been able to stomach along the way. So when my mother sent me the recipe that she found online for this cheese and mushroom stuffed chicken on the Sargento Foods website, I wasn’t all that excited about trying it. Now that I have tried it, now I have to confess to my mother that she was right, something that I don’t enjoy doing, but alas I must.

I have always enjoyed the cheeses made by Sargento and their italian cheese really makes a difference in this recipe. I do believe that the strong taste of the italian cheese helps mask the taste of the fresh mushrooms that are included in this stuffed chicken recipe. I think that I will check out their website as well and see if there is something else there to offer that I might be able to cook up and serve one night. Eating the same old same old gets tiresome doesn’t it?

Cakes & Pies with Whip

Back in the day when I was a little girl my mother would buy cans of Reddi Whip whipped cream. We would have a dessert after almost every dinner because my dad loved dessert. We always saved room for dessert! We used Reddi Whip on a lot of the desserts.Sometimes dessert was as simple as a little cup of Breyer’s ice cream. Mom would squirt some Reddi Whip on top and put a maraschino cherry or little sugar sprinkles on it. At least once a week we would have some kind of pie and once a week we would have some kind of cake. In between those we might have Jello with Reddi Whip squirted on top.

My favorite these days is warm ginger bread topped off with good old Reddi Whip!

Backsplash Options

It amazes me that the majority of homes that I have the opportunity to visit do not have a backsplash installed behind the kitchen sink, especially the older homes that I see. I can’t imagine not having my backsplash tile in my kitchen, so much water get splashed from the faucet that everything would get soaking wet and the damage would be tremendous, not to mention the mold that could possibly grow from all of the moisture. That would be disastrous considering how allergic I am to mold. I found that out the hard way and I wouldn’t wish that on anyone. There is mold almost everywhere you turn now a days, it is a real problem for so many people and businesses.

My mother had a piece of see through plastic installed on the wall behind her kitchen sink and her stove in order to protect the paint and the wallpaper in her kitchen. It didn’t look all that great but it did the trick all right. A Birthday Shout Out to My Sis!

Today my sister is celebrating her 40th birthday. I wish she could spend the day doing everything fun and nice for herself to pamper her body and relax the mind. Wouldn’t that be a nice way to start the next year of your life?

But she doesn’t have that luxury, what with the economic times we are all in plus the fact that her hubby was hurt in a car wreck and can’t work until he recovers. So it was off to work she goes, and her dinner plans include Chinese take out that she picks up on her way home from work. So at least she doesn’t have to cook.

Changing Career Paths

With all the layoffs and companies going bankrupt, a lot of people are looking for the silver lining in this economic downturn. One bright spot is that the loss of one job gives you the opportunity to change career paths and pursue new dreams and personal goals. If I had the chance to change my own career path I would search out a top culinary school and become a chef.

As much as I love to cook, I think a career in a professional kitchen would be very satisfying. I’ve even searched online to see what schools are in the middle of the state. I found the Art Institute listed, which would be perfect for me. This site has information on both schools and careers, which makes it easy to find the information needed to make the career transition. There are so many ways to change career paths these days, evening classes and online options out the yahoo!

A lot of people have flocked to further their education to get into the medical field, from which one would like there would always be need for. But now I am hearing the this Obama Care is all ready making medical businesses start laying off and readjusting their budgets and all hell is going to let loose here real soon.
