The week end turned out pleasant enough, Saturday the winds were totally outrageous, so I did a bunch of errands and things around the house that kept me from being blown away outside. All the blooms on my pear trees were blown completely off and are now standing naked in my backyard, how awkward! Sunday was spent doing some much needed yard work and tending to my future garden in progress. It got up to 70 degrees and this morning I see some sunburn on my nose, cheeks and forehead, guess I’ll need to buy a hat for my gardening ventures, in order to protect my face this summer.

Saturday afternoon a friend from work came by, we had dinner, a few drinks, some laughs and then went on my computer for a time being. He is a whiz online and always shows me the most interesting and enlightening things when he comes over and we spend some time online.

While on the subject of yummy foods, I have to tell you that the cheese and mushroom stuffed chicken that I made last night (under protest, mind you) turned out really great. I don’t normally like anything to do with mushrooms, although I have found a few recipes that I have been able to stomach along the way. So when my mother sent me the recipe that she found online for this cheese and mushroom stuffed chicken on the Sargento Foods website, I wasn’t all that excited about trying it. Now that I have tried it, now I have to confess to my mother that she was right, something that I don’t enjoy doing, but alas I must.

I have always enjoyed the cheeses made by Sargento and their italian cheese really makes a difference in this recipe. I do believe that the strong taste of the italian cheese helps mask the taste of the fresh mushrooms that are included in this stuffed chicken recipe. I think that I will check out their website as well and see if there is something else there to offer that I might be able to cook up and serve one night. Eating the same old same old gets tiresome doesn’t it?

Cheese and Mushroom Stuffed Chicken

Back in the day when I was a little girl my mother would buy cans of Reddi Whip whipped cream. We would have a dessert after almost every dinner because my dad loved dessert. We always saved room for dessert! We used Reddi Whip on a lot of the desserts.Sometimes dessert was as simple as a little cup of Breyer’s ice cream. Mom would squirt some Reddi Whip on top and put a maraschino cherry or little sugar sprinkles on it. At least once a week we would have some kind of pie and once a week we would have some kind of cake. In between those we might have Jello with Reddi Whip squirted on top.

My favorite these days is warm ginger bread topped off with good old Reddi Whip!

It really shocked me when my mother turned down my invitation to go to the movies because she is very paranoid about catching bed bugs. No matter what I said or did she firmly kept refusing and my daughter twisted the whole thing around to where she thinks her grandmother doesn’t want to go to the movies with us because of her. This has been a constant battle between the three generations of females that just can’t seem to communicate with one another without someone taking it the wrong way and/or getting their feelings hurt on some type of level, sigh…..

It is a well known fact that bed bugs are becoming a huge issue with tons of people everywhere, as well as head lice. Funny thing is that my mother and step-father are currently on their way to Florida for a couple of weeks visiting friends and relatives and enjoying all that the “Land of Sunshine” has to offer. They plan on staying at various motels/hotels on their way down and back up again, which are more likely to infect someone with numerous unwanted critters. Go figure!

I’m so glad to hear that my first cousin has decided to further her education and get her personal trainer certification very soon. Her life has been in turmoil for so long, she deserves so much more than what life has handed to her. We were so very close while growing up and then after high school she decided to marry the first jerk that gave her a second look. Now she is divorced with 3 kids, all being extremely active and all boys.

She is living in a trailer park some where close to Atlanta Georgia, working as a waitress day and night trying to make ends meet, so it’s good news to hear that she has found something that interests her enough to get off of her duff and try and make a go of it. Her ex isn’t helping her and the kids out one bit, so she has her hands full.

She has put on a few pounds in the last decade or so, so she is interested in becoming as active as her young sons are and becoming a personal trainer would benefit every one all the way around.
